BUBBLE - Loire, Vouvray (Touraine) France 100% Chenin Blanc
In Vouvray, both white dry, sparkling and sweet wines are made from the Chenin Blanc grape. In the warmer years, the percentage of sweetened wines is often somewhat higher than in the cooler years.
This brut has a snow-white mousse of small bubbles. Clear, slightly yellow color. In the nose delicious fruit such as apple and peach. Soft insert with lots of mouth mousse, fairly full, again white fruit, pleasantly dry with a long finish.
After fermentation in steel tanks, the young wine undergoes a second fermentation in the bottle. The added yeast (and sugar) solution, together with the residual sugar, creates some sediment and small carbon dioxide bubbles. This will take approximately 2 years. The sediment is removed by a special process. The wine has a pressure of 5.5 bar and contains 10 grams of residual sugar, which is referred to as Brut in sparkling wines.
Domaine Vigneau Chevreau has been around since 1875, today the fifth generation is at the helm. This serious producer makes a classic type of Vouvray, in both the dry and sweeter versions. Since 1995 they have been working with full respect for nature in a biodynamic way. The harvest of 33 ha of vineyard here often does not start until the beginning to mid-October and ends in mid-November. Harvesting is done exclusively by hand
The city and wine region of Vouvray (about 2,250 hectares spread over 8 municipalities) is located east of the city of Tours on the river Loire, in the heart of the Touraine. The tuff layer (chalk) here is tens of meters deep and not only forms the basis for the sparkling and white wines from the Chenin Blanc grape, but also for the cellars carved into it.
WHITE - Languedoc, Les Vignerons de Calvisson, 100% Viognier
Languedoc is the wine region in the south of France around the city of Montpellier near the Mediterranean. The varietal wines (from one grape variety) may not be sold as AOP wines and are therefore sold as IGP Pays d’Oc. Oc is derived from Occitania, the area in southern France that still has its own language (langue), globally Languedoc. The climate is very suitable for viticulture, lots of sun, plenty of rain, hardly any frost.
The wine is golden in color with shades of green. Wild peach and apricot on the nose, a hint of pear and a touch of white flowers. Harmonious, slightly oily structure, with lots of stone fruit and some honey in the taste. Pleasant, round finish. Totally viognier in every way.
The grapes for this wine come from terraces with a clay-calcareous soil. The average height of the vineyards is 50 to 80 meters. The vinification is done on stainless steel at a relatively low temperature, which preserves the fine flavor components and fruitiness.
In 1939, 87 winegrowers in the village of Calvisson decided to work together in order to share the costs and together maintain and above all improve the quality of the wines. This is how the Les Vignerons de Calvisson cooperative was born with 1,200 ha of vineyard. Calvisson is 15 km from Nîmes and 25 km from the Mediterranean coast.
Serve with fish dishes with rich sauces, shellfish, white meat and poultry, but also with Asian dishes, sushi and vegetable dishes. temprature 10-12 degrees.
RED - Bodegas Vallobera, Laguardia, Rioja Alavese, Spain 100% Tempranillo
This wine has a purple-red color. Fruity with ripe, red fruit in the aroma and taste. Elegant, juicy, not too heavy wine, light dosed wood touch, a spicy aftertaste with clearly the character of a Rioja.
The grapes undergo cold maceration for four days before fermentation. During the fermentation, remontages take place every day, whereby the fermenting must is pumped over the skins. After the fermentation of 21 days at a maximum of 30 ° C, the wines are aged in barrels of French and American oak. The wine has been aged for 6 months, resulting in light oak in taste and aftertaste.
The San Pedro family is a household name in the town of Laguardia in Rioja Alavesa. For years, they have owned a total of about 80 hectares of vineyards spread over 14 plots. Vineyard ‘Vallobera’, owned by the family and namesake of the winery, is one of the highest vineyards in Alavese. Malarina is a plot of 8 ha with more than 25 years old tempranillo sticks. The Malarina label was designed by a well-known artist from Laguardia.
The Rioja area (65,000 ha) is located in Northern Spain, about 100 km south of the city of Bilbao. The area has a partly continental climate, but there are certainly influences from the Mediterranean and the Atlantic Ocean. There are three districts: La Rioja Alta (high), Alavese (transition area) and Baja (low-lying). The name Rioja comes from the river ‘Rio Oja’ that runs through the region. Rioja wines are always ready to drink after bottling. It is the first Spanish wine region with a DOCa classification.
